Salad Preparation

Prepare the Vegetables
Using a vegetable peeler or a mandoline, shred the green papaya and carrot into thin strips. Place them in a large mixing bowl.

Add Cherry Tomatoes
Cut the cherry tomatoes in half and add them to the bowl with the shredded papaya and carrot.

Prepare the Green Beans
Trim the ends of the green beans and cut them into 1-inch pieces. Add them to the mixing bowl.

Add Peanuts and Cilantro
Coarsely chop the roasted peanuts and add them along with the chopped fresh cilantro to the bowl. Toss the ingredients together gently.

Mix the Dressing
In a small bowl, whisk together the fish sauce, lime juice, and palm sugar until the sugar is dissolved.

Add Garlic and Chilies
Mix in the minced garlic and sliced Thai bird chilies. Adjust the spice level according to your preference.
Combine and Serve

Combine Salad with Dressing
Pour the dressing over the prepared salad. Toss everything together until the vegetables are well coated with the dressing.
