    Prepare the Vegetables

    Wash and chop the tomatoes, broccoli, and Chinese broccoli into bite-sized pieces. Set aside.

    Prepare the Cucumber

    Slice the cucumber into thin rounds and set aside for garnish.

    Chop the Cilantro

    Rinse the cilantro, remove the leaves from the stems, and chop roughly.

Cooking

    Heat the Oil

    In a large wok or pan, heat the vegetable oil over medium-high heat.

    Cook the Garlic

    Add the minced garlic to the hot oil and sauté for about 30 seconds until fragrant, being careful not to burn it.

    Add the Vegetables

    Add the chopped tomato, broccoli, and Chinese broccoli to the pan. Stir-fry for 3-4 minutes until they are slightly tender but still crisp.

    Add the Rice

    Add the cooked jasmine rice to the pan. Use a spatula to break up any clumps and combine it with the vegetables.

    Season the Rice

    Pour the soy sauce and fish sauce over the rice mixture. Stir well to combine. Season with salt and pepper to taste.

    Add the Eggs

    Push the rice and vegetables to one side of the pan. Crack the eggs into the empty side and scramble until cooked. Mix the scrambled eggs into the rice.

    Final Stir-Fry

    Continue to stir-fry the entire mixture for another 2-3 minutes to ensure everything is heated through and well combined.

Serving

    Garnish and Serve

    Remove the fried rice from the heat and garnish with chopped cilantro. Serve with cucumber slices on the side.
