Method

Preparing the Chicken Skewers

    Marinate the Chicken

    In a mixing bowl, combine soy sauce, lime juice, minced garlic, ground cumin, ground coriander, olive oil, salt, and black pepper. Add the diced chicken breast and stir to coat. Cover and marinate in the refrigerator for at least 30 minutes.

    Prepare Skewers

    If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. If using metal skewers, they are ready to use.

    Assemble Skewers

    Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece for even cooking.

Making the Peanut Sauce

    Combine Ingredients

    In a saucepan, mix together peanut butter, coconut milk, soy sauce, lime juice, brown sugar, minced garlic, and chili paste. Stir until well combined.

    Cook the Sauce

    Heat the saucepan over medium heat. Stir frequently until the sauce is heated through and smooth, about 5-7 minutes. Remove from heat and set aside.

Grilling the Chicken Skewers

    Preheat Grill

    Preheat your grill to medium-high heat. If using a grill pan, preheat it on the stovetop.

    Grill the Skewers

    Place the chicken skewers on the grill. Cook for about 5-7 minutes on each side or until the chicken is fully cooked and has nice grill marks.

    Serve

    Remove the skewers from the grill and serve hot with the peanut sauce for dipping.
