Prepare the Ingredients
Slice the bell pepper into thin strips and ensure the bamboo shoots are ready to use.

Heat the Oil
In a large skillet or wok, heat the vegetable oil over medium heat.

Add Red Curry Paste
Add the red curry paste to the skillet and stir-fry for about 1-2 minutes until fragrant.

Add Coconut Milk
Pour in the coconut milk slowly while stirring to combine with the curry paste.

Incorporate Vegetables
Add the sliced bell pepper and bamboo shoots to the coconut milk mixture. Stir well to coat the vegetables.

Add salt and sugar to the mixture. Stir and let it simmer for about 5-7 minutes until the vegetables are tender.

Remove the skillet from heat and stir in the fresh basil leaves. Squeeze lime juice over the curry to taste.
