    Start by chopping the bell pepper and tomato into small, even pieces. Set aside.

    Wash the fresh basil leaves and pat them dry. Tear them into smaller pieces for better flavor release.

Cooking

    In a large skillet, heat the olive oil over medium heat. Add the chopped bell pepper and tomato. Sauté for about 5 minutes or until the vegetables are slightly softened.

    Add the pineapple chunks to the skillet along with the curry powder, salt, and black pepper. Stir well to combine all ingredients.

    Pour in the coconut milk and stir to combine. Bring the mixture to a gentle simmer and let cook for another 10 minutes, stirring occasionally.
