Soak the Noodles
Soak the rice noodles in warm water for about 20-30 minutes or until they are soft. Drain and set aside.

Prepare the Sauce
In a bowl, mix together soy sauce, fish sauce, tamarind paste, brown sugar, and lime juice. Set aside.
Cooking

Cook Proteins
In a large skillet or wok, heat vegetable oil over medium heat. Add the shrimp and chicken (or tofu) and cook until shrimp is pink and chicken is cooked through, about 5-7 minutes. Remove from skillet and set aside.

Stir-fry Vegetables
In the same skillet, add the red bell pepper and green onions. Stir-fry for about 2-3 minutes until just tender.

Combine Noodles and Sauce
Add the soaked rice noodles to the skillet along with the prepared sauce. Toss everything together for about 2-3 minutes until well combined and heated through.

Add Proteins and Bean Sprouts
Return the cooked shrimp and chicken (or tofu) to the skillet and add the bean sprouts. Mix well and cook for an additional 2 minutes.
Serving

Garnish and Serve
Serve the Pad Thai hot, garnished with chopped peanuts, cilantro, and lime wedges on the side.
