    Soak the rice noodles

    Soak the rice noodles in warm water for about 30 minutes or until they become soft. Drain and set aside.

    Prepare the vegetables

    Wash and chop the Chinese broccoli into bite-sized pieces. Peel and julienne the carrots. Mince the garlic.

    Prepare the protein

    Slice the chicken breast into thin strips.

Cooking

    Cook the chicken

    In a large wok or frying pan, heat 2 tablespoons of vegetable oil over medium-high heat. Add the sliced chicken and stir-fry until cooked through, about 5-7 minutes. Remove from the pan and set aside.

    Stir-fry vegetables

    In the same pan, add 1 tablespoon of vegetable oil. Add minced garlic and stir-fry for about 30 seconds until fragrant. Then add the Chinese broccoli and carrots, and stir-fry for another 3-4 minutes until tender.

    Add noodles and sauce

    Add the drained rice noodles to the pan with the vegetables. In a small bowl, mix together the soy sauce, oyster sauce, sugar, and white pepper. Pour over the noodles and toss everything together to combine.

    Scramble the eggs

    Push the noodle mixture to one side of the pan and crack the eggs into the empty side. Scramble them until just set, then mix them into the noodle mixture.

    Combine and serve

    Finally, return the cooked chicken to the pan and toss everything together for an additional minute until heated through. Serve hot.
