Prepare the Soup Base

    Combine Broth and Water

    In a large pot, combine the chicken or vegetable broth with 1 cup of water. Bring to a gentle boil over medium heat.

    Add Flavorings

    Stir in the soy sauce, rice vinegar, and white pepper. Adjust salt to taste.

    Thicken the Soup

    In a small bowl, mix the cornstarch with a few tablespoons of water to create a slurry. Gradually add this to the boiling broth while stirring continuously to avoid lumps.

    Add Vegetables and Tofu

    Add the cubed tofu, sliced mushrooms, julienned carrot, and bamboo shoots to the pot. Reduce heat and let simmer for about 5-7 minutes until the vegetables are tender.

    Add the Egg

    Slowly pour the beaten eggs into the soup while stirring gently to create egg ribbons. Cook for an additional 1-2 minutes until the eggs are set.

Garnish and Serve

    Ladle the hot and sour soup into bowls.
