    Prepare the Ingredients

    Chop the chicken breast (or tofu) into bite-sized pieces. Slice the bell peppers, zucchini, and prepare the snow peas. Set aside.

Cooking the Curry

    Cook the Protein

    In a large pot over medium heat, add a splash of oil and cook the chicken (or tofu) until browned and cooked through, about 5-7 minutes. Remove and set aside.

    Make the Curry Base

    In the same pot, add the green curry paste and cook for 1-2 minutes until fragrant. Stir in the coconut milk, vegetable broth, fish sauce, and brown sugar. Bring to a simmer.

    Add Vegetables

    Add the bell peppers, zucchini, and snow peas to the curry base. Simmer for about 5 minutes until the vegetables are tender.

    Combine Protein with Curry

    Return the cooked chicken (or tofu) to the pot and stir in the basil leaves. Let it simmer for another 2-3 minutes.

Serving

    Serve the Dish

    Ladle the green curry into bowls. Garnish with lime wedges and chili slices to taste. Serve hot with steamed rice.
