    Prepare the Ingredients

    Finely dice the carrot and mince the garlic. Slice the green onions into thin rounds and set aside. If using fresh crab, ensure it is picked through for shells.

    Cook the Eggs

    In a large skillet or wok, heat 1 tablespoon of oil over medium heat. Crack the eggs into the skillet and scramble until just set. Remove the eggs from the skillet and set aside.

    Sauté the Vegetables

    In the same skillet, add another tablespoon of oil. Add the minced garlic, diced carrots, and peas. Stir-fry for about 3-4 minutes until the vegetables are tender.

    Add Rice and Crab

    Add the cooked jasmine rice to the skillet, breaking up any clumps. Stir in the crab meat and mix well. Cook for another 3-4 minutes until everything is heated through.

    Season the Fried Rice

    Pour in the soy sauce, sesame oil, salt, and black pepper. Stir everything together until evenly coated. Finally, add the scrambled eggs and green onions, mixing well.

Serving

    Garnish and Serve

    Remove the crab fried rice from heat. Serve hot, garnished with chopped cilantro and slices of cucumber on the side.
