Truffle Fries Recipe

Preparation

    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into thin strips to create fries, approximately 1/4 inch thick.

    Soak the Fries

    Place the cut fries in a bowl of cold water and soak for at least 30 minutes to remove excess starch.

Frying

    Heat the Oil

    In a large pot or deep fryer, heat vegetable oil to 350°F (175°C). Use a thermometer to ensure the oil is at the right temperature.

    Dry the Fries

    After soaking, drain the fries and pat them dry with paper towels to remove excess moisture.

    Fry the Fries (First Fry)

    Carefully add a batch of fries to the hot oil and fry for about 3-4 minutes until they are lightly golden. Remove with a slotted spoon and drain on paper towels. Repeat with remaining fries.

    Fry the Fries (Second Fry)

    Increase the oil temperature to 375°F (190°C). Once hot, return the fries to the oil in batches and fry for an additional 2-3 minutes until they are crispy and golden brown. Drain again on paper towels.

Finishing Touches

    Season the Fries

    Immediately after frying, place the fries in a large bowl. Drizzle with truffle oil, then sprinkle with grated Parmesan cheese, salt, black pepper, and chopped parsley. Toss gently to coat.

    Serve

    Serve the truffle fries hot as a side dish or appetizer. Enjoy!
