Chicken Preparation

Marinate the Chicken
Combine the sake and soy sauce in a mixing bowl. Add the chicken breasts, ensuring they are fully submerged in the marinade. Cover and refrigerate for at least 1 hour, preferably overnight.

Make the Caramel
In a small saucepan, combine sugar and water over medium heat. Stir until the sugar dissolves. Allow it to simmer without stirring until it turns a deep amber color. Remove from heat and carefully stir in gochugaru, soy sauce, and rice vinegar. Set aside to cool.
Pickled Fresnos Preparation

Prepare the Pickles
Slice Fresno peppers into rings. In a small saucepan, combine rice vinegar, sugar, and salt. Bring to a boil, stirring until sugar dissolves. Pour over the sliced peppers in a jar and let them pickle for at least 30 minutes.
Watermelon Radish Salad Preparation

Plate the Dish
On a serving platter, arrange the sliced chicken. Drizzle with Korean chili caramel and top with pickled fresnos. Serve alongside the watermelon radish salad.
