Method
Preparing the Chicken Filling

Step 1: Cook the Chicken
In a skillet, heat the cooking oil over medium-high heat. Add the boneless chicken thighs and cook for about 5-7 minutes on each side, until golden brown and cooked through. Remove the chicken from the skillet and allow to cool slightly.

Once the chicken is cool enough to handle, shred it into bite-sized pieces.

In the same skillet, add the minced garlic, minced ginger, and Szechuan peppercorns. Sauté for 1-2 minutes until fragrant.

Step 4: Combine Chicken with Aromatics
Add the shredded chicken back to the skillet, along with 4 tablespoons of soy sauce. Stir to combine and cook for an additional 2-3 minutes.

Step 5: Add Peanuts and Green Onions
Stir in the chopped peanuts and green onions, then remove from the heat.
Making the Sweet Soy Ginger Glaze

Step 6: Combine Ingredients
In a small saucepan, combine 3 tablespoons of soy sauce, 2 tablespoons of brown sugar, 1 teaspoon of grated ginger, and 1 teaspoon of sesame oil.

Bring the mixture to a simmer over medium heat, stirring occasionally until the sugar is fully dissolved and the glaze thickens slightly, about 3-4 minutes. Remove from heat.
Making the Spicy Aioli

In a small bowl, combine 1 cup of mayonnaise, 2 tablespoons of sriracha sauce, and 1 tablespoon of lime juice. Mix well until smooth.
Assembling the Lettuce Wraps

Take a butter lettuce leaf and place a generous spoonful of the chicken filling in the center.

Drizzle over some of the sweet soy ginger glaze.

Top with a dollop of spicy aioli and sprinkle crispy wontons over the top.
