Tataki-Style Steak

Prepare the Steak
Season the beef tenderloin with salt and black pepper on all sides.

Chill the Steak
Wrap the steak in plastic wrap and refrigerate for at least 15 minutes to firm up.

Slice the Steak
Once chilled, slice the steak thinly against the grain. Garnish with chopped green onions, ginger, and wasabi.
Ponzu Sauce

Combine Ingredients
In a bowl, combine soy sauce, yuzu juice, rice vinegar, mirin, and dashi stock. Stir well.

Serve
Serve the ponzu sauce alongside the sliced steak for dipping.
Seared Salmon Sushi

Prepare Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to package instructions.

Season the Rice
In a small bowl, mix rice vinegar, sugar, and salt. Once the rice is cooked, transfer it to a large bowl and fold in the vinegar mixture. Let it cool.

Prepare Salmon
Lightly sear the fresh salmon fillet on a hot skillet for about 30 seconds on each side. Let it cool before slicing.

Assemble Sushi
On a nori sheet, spread a thin layer of sushi rice, add slices of seared salmon, avocado, and sprinkle with sesame seeds. Roll tightly and slice into pieces.

Prepare Sushi Rice
Use leftover sushi rice from the previous section or prepare fresh sushi rice as instructed.
