For the Prime Rib

Prepare the Prime Rib
Preheat your oven to 450°F (232°C).

In a small bowl, mix together the kosher salt, black pepper, garlic powder, onion powder, and fresh rosemary. Rub this mixture all over the prime rib roast.

Heat the olive oil in a large skillet over medium-high heat. Sear the prime rib on all sides until browned, about 3-4 minutes per side.

Place the seared prime rib in a roasting pan and roast in the preheated oven for 20 minutes. Then lower the temperature to 325°F (163°C) and continue roasting for about 1.5 to 2 hours or until the internal temperature reaches 130°F (54°C) for medium-rare.

Remove the prime rib from the oven and let it rest for at least 20 minutes before slicing.
For the Au Jus

Prepare the Au Jus
While the prime rib is resting, prepare the au jus.

Bring the mixture to a simmer and let it reduce for about 10-15 minutes. Season with black pepper to taste.

Strain the au jus to remove any solids if desired, then keep it warm until serving.

Assemble the Sandwich
Slice the rested prime rib into thin slices.

Add the sliced prime rib on top of the arugula, then drizzle with horseradish sauce. Close the sandwich.

Serve the sandwich with a side of warm au jus for dipping.
