Cake Preparation

Melt the Chocolate and Butter
In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler) and stir until melted and smooth. Remove from heat and let cool slightly.

Mix Sugar and Eggs
In a separate mixing bowl, whisk together the granulated sugar and large eggs until the mixture is pale and fluffy (about 3-5 minutes).

Add Dry Ingredients
Sift the all-purpose flour and salt over the chocolate mixture and fold gently until just combined. Be careful not to overmix.

Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling them about 3/4 full.

Bake
Bake the cakes in the preheated oven for about 12-14 minutes, or until the edges are firm but the center is still soft.

Cool and Serve
Remove from the oven and let the cakes cool for 1 minute before inverting onto plates. Serve immediately with fresh raspberries and a scoop of Tahitian vanilla ice cream.
