Preparation of Ingredients
- 1
Prepare the Lobster
Bring a large pot of salted water to a boil. Add the whole Atlantic lobster and cook for about 8-10 minutes until bright red. Remove and set aside to cool. Once cool, extract the meat from the claws and tail, and chop into bite-sized pieces.
- 2
Prepare the Prawns
Peel and devein the prawns. Rinse them under cold water and set aside.
- 3
Chop the Vegetables
Finely chop the shallots and halve the cherry tomatoes. Roughly chop the Italian parsley.
Cooking the Spaghetti and Sauce
- 4
Cook the Spaghetti
In the same pot of boiling water, add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti and set aside.
- 5
Make the Sauce
In a large skillet, melt the butter over medium heat. Add the shallots and sauté until translucent, about 2-3 minutes. Pour in the white wine and let it simmer for 2-3 minutes until reduced by half.
- 6
Combine Ingredients
Add the cherry tomatoes and prawns to the skillet, cooking for 3-4 minutes until the prawns are pink and cooked through. Stir in the lobster meat, lemon juice, salt, and black pepper. If the sauce is too thick, add a little reserved pasta water to reach your desired consistency.
- 7
Mix with Spaghetti
Add the drained spaghetti to the skillet, tossing to combine all ingredients thoroughly. Cook for an additional 2 minutes to heat through.
Serving
- 8
Garnish and Serve
Remove from heat, sprinkle with chopped Italian parsley, and serve immediately. Enjoy your Lobster Spaghetti!
