Prep the Ingredients

    Prepare Lettuce

    Gently wash the butter lettuce leaves under cold water, and pat them dry with a clean towel.

    Prepare Vegetables

    Use a sharp knife to cut the carrot and cucumber into thin strips. Chop the green onions into small pieces.

Prepare Fried Chicken

    Cut Chicken

    Using a sharp knife, cut the boneless chicken thighs into 1-inch pieces.

    Make Coating

    In a mixing bowl, combine 1 cup of all-purpose flour, 1 cup of cornstarch, 1 tsp of baking powder, 1 tsp of salt, 1 tsp of black pepper, and 1 tsp of garlic powder. Mix well.

    Prepare Batter

    Crack 1 large egg into a bowl and add 1 cup of cold water. Whisk until well combined.

    Coat Chicken

    Take each piece of chicken, dip it into the batter, allowing excess to drip off, then dredge it in the flour mixture until fully coated.

Fry the Chicken

    Heat Oil

    Pour 2 cups of vegetable oil into a deep skillet or pot, and heat until shimmering but not smoking.

    Fry Chicken

    Carefully add coated chicken pieces to the hot oil, frying in batches to avoid overcrowding. Fry for 5-7 minutes or until golden brown and crispy.

    Once golden brown, remove the chicken using a slotted spoon and place on paper towels to drain excess oil.

Assemble and Serve

    Take a butter lettuce leaf, fill it with fried chicken pieces, and top with julienned carrots, cucumbers, and chopped green onions.
