    Prepare the Dough

    In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Cut in the cold unsalted butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

    Add Ice Water

    Gradually add ice water, one tablespoon at a time, mixing gently with a fork until the dough comes together. Do not overwork the dough.

    Chill the Dough

    Shape the dough into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour.

Apple Filling

    Prepare the Apples

    In a large bowl, combine the sliced Granny Smith apples, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Toss until the apples are well coated.

    Let the Filling Rest

    Allow the filling to sit for 15 minutes to let the flavors meld and the juices to release.

Assembling and Baking

    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Roll Out the Dough

    On a floured surface, roll out the chilled dough to about 1/8-inch thickness. Cut out rounds that are about 6 inches in diameter.

    Fill the Pastry

    Place a round of pastry in each individual pie dish. Spoon the apple filling into the pastry, filling it generously.

    Seal the Pies

    Fold over the edges of the pastry and crimp with a fork to seal. Cut small slits on the top to allow steam to escape.

    Place the filled pie dishes on a baking sheet and bake in the preheated oven for 25-30 minutes, or until the crust is golden brown.
