Preparation of Ingredients

    Prepare the Strawberries

    Wash the fresh strawberries under running water. Remove the stems and slice them in half.

    Prepare the Beets

    If using store-bought marinated beets, drain them and cut into small cubes. If making marinated beets from scratch, boil beets until tender, peel, and marinate in a mixture of vinegar, olive oil, salt, and pepper for at least 1 hour.

    Prepare the Corn

    Roast the corn by placing it on a grill or in an oven at 400°F (200°C) for about 15-20 minutes, turning occasionally until charred. Once cool, cut the kernels off the cob.

    Prepare the Aged Cheddar

    Cube or shred the aged cheddar cheese based on preference for the salad.

Assembly

    Combine the Ingredients

    In a large salad bowl, combine the prepared strawberries, marinated beets, roasted corn, and candied sunflower seeds.

    Add the Cheese

    Sprinkle the cubed or shredded aged cheddar cheese on top of the salad mixture.

    Dress the Salad

    Drizzle the champagne vinaigrette over the salad. Toss gently to combine all ingredients without bruising the strawberries.
