Method

Crème Brûlée Cheesecake

    Prepare the Crust

    Preheat your oven to 325°F (160°C). In a bowl, mix the graham cracker crumbs, melted butter, and a pinch of sugar until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.

    Make the Cheesecake Filling

    In a large mixing bowl, beat the cream cheese and sugar together until smooth. Add the heavy cream, vanilla extract, and cornstarch, mixing until fully incorporated. Add the eggs one at a time, mixing just until blended after each addition.

    Bake the Cheesecake

    Pour the cheesecake filling over the prepared crust. Bake in the preheated oven for 50-60 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually.

    Chill the Cheesecake

    Remove the cheesecake from the oven and let it cool to room temperature. Cover with plastic wrap and refrigerate for at least 4 hours or overnight.

Pineapple-Mango Compote

    Cook the Compote

    In a small saucepan, combine the diced pineapple, diced mango, sugar, and lime juice. Cook over medium heat, stirring occasionally, until the fruit is soft and the mixture thickens, about 10-15 minutes.

    Cool the Compote

    Remove from heat and allow to cool before serving over the cheesecake.

Coconut Whipped Cream

    Prepare the Coconut Whipped Cream

    Chill a mixing bowl and beaters. Open the can of coconut cream and scoop out the solid part into the chilled bowl. Add the powdered sugar and vanilla extract. Beat until fluffy and smooth.

Passionfruit Mango Sauce

    Make the Sauce

    In a small saucepan, combine the passionfruit puree, mango puree, and sugar. Heat over low heat, stirring until the sugar dissolves and the sauce thickens slightly, about 5-10 minutes. Allow to cool.

Coconut Crumble

    Prepare the Coconut Crumble

    Preheat your oven to 350°F (175°C). In a bowl, mix the flaked coconut, oats, brown sugar, and melted butter. Spread the mixture evenly on a baking sheet.

    Bake the Crumble

    Bake in the preheated oven for 10-12 minutes or until golden brown. Allow to cool before serving.
