Rinse the calamari rings under cold water and pat them dry with paper towels. This step is crucial for achieving crispy results.

Make the Breading Mixture
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix thoroughly.

Soak in Buttermilk
Pour the buttermilk into another bowl. Dip each calamari ring into the buttermilk, ensuring it is fully coated.

Bread the Calamari
After coating in buttermilk, transfer the calamari rings to the breading mixture. Ensure each ring is thoroughly coated, then shake off any excess breading.

Heat the Oil
In a large, deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

Fry the Calamari
Carefully add a few calamari rings to the hot oil, ensuring not to overcrowd the pan. Fry for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

In a small bowl, mix together the mayonnaise, sriracha sauce, fresh lemon juice, minced garlic, and salt. Stir until well combined.
