Method

Preparation of Chocolate Lava Cake

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust them lightly with flour.

  2. 2

    Melt Chocolate and Butter

In a microwave-safe bowl, combine the unsweetened chocolate and unsalted butter. Microwave in 30-second intervals, stirring between each, until completely melted and smooth.

  3. 3

    Combine Sugar and Eggs

In a separate bowl, whisk together the granulated sugar, large eggs, and large egg yolks until well combined and slightly thickened.

  4. 4

    Mix Ingredients

Add the melted chocolate mixture and vanilla extract to the egg mixture. Stir until fully incorporated.

  5. 5

    Add Dry Ingredients

Gently fold in the all-purpose flour and a pinch of salt until just combined. Do not overmix.

  6. 6

    Pour into Ramekins

Evenly divide the batter among the prepared ramekins, filling them about 2/3 full.

  7. 7

    Bake

Place the ramekins on a baking sheet and bake in the preheated oven for about 12-14 minutes, or until the edges are firm but the center is still soft.

  8. 8

    Cool Slightly

Remove from the oven and let them sit for 1-2 minutes. Run a knife around the edges to loosen the cakes.

  9. 9

    Invert and Serve

Carefully invert each ramekin onto a plate and gently lift off the ramekin. Serve immediately with a scoop of vanilla ice cream on top, dust with powdered sugar, and add fresh berries if desired.
