Method

Preparing the fries

  1. 1

    Cutting the potatoes

Wash and peel the russet potatoes. Cut them into thin fries, about 1/4 inch thick.

  2. 2

    Soaking the fries

Place the cut fries in a bowl of cold water and soak for at least 30 minutes to remove excess starch. This will help them become crispier when fried.

  3. 3

    Drying the fries

After soaking, drain and pat the fries dry with paper towels to remove any excess moisture.

  4. 4

    Frying the fries

In a deep fryer or a heavy pot, heat vegetable oil to 350°F (175°C). Fry the potatoes in batches until they are golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels, then season with salt.

Making the blue cheese sauce

  1. 5

    Mixing ingredients

In a mixing bowl, combine blue cheese, sour cream, mayonnaise, lemon juice, garlic powder, and black pepper. Mix until smooth, leaving some chunks of blue cheese for texture.

Assembling the dish

  1. 6

    Plating the fries

Place the hot, crispy fries on a serving platter.

  2. 7

    Adding the sauce

Drizzle the blue cheese sauce generously over the fries.

  3. 8

    Garnishing

Sprinkle chopped chives and crumbled blue cheese on top for garnish. Serve immediately.
