Method

Prepare the Salmon

  1. 1

    Season the Salmon

Pat the salmon fillets dry with paper towels. Brush both sides of the salmon with olive oil, and season with salt and black pepper.

  2. 2

    Apply BBQ Sauce

Brush a generous amount of BBQ sauce over the salmon fillets, ensuring they are well-coated on both sides.

  3. 3

    Grill the Salmon

Preheat a grill or grill pan over medium-high heat. Place the salmon fillets skin-side down on the grill. Grill for about 4-5 minutes per side, or until the salmon is cooked through and flakes easily with a fork. Brush additional BBQ sauce on the salmon while grilling if desired.

Cook the Rice

  1. 4

    Rinse the Rice

Rinse the brown rice under cold water in a fine-mesh strainer until the water runs clear.

  2. 5

    Cook the Rice

In a medium saucepan, combine the rinsed brown rice, water, and salt. Bring to a boil over high heat, then reduce the heat to low, cover, and simmer for 45-50 minutes, or until the rice is tender and the water is absorbed.

Prepare Toppings

  1. 6

    Prepare Vegetables

While the rice and salmon are cooking, prepare the vegetable toppings. Drain and rinse the corn if using canned. Cut the avocado into slices, halve the cherry tomatoes, and chop the green onions and cilantro.

Assemble the Bowl

  1. 7

    Layer Ingredients

Once the rice is cooked, fluff it with a fork and divide it among two bowls. Top each bowl with the grilled salmon fillet, corn, avocado slices, cherry tomatoes, chopped green onions, and cilantro.

  2. 8

    Serve

Drizzle additional BBQ sauce over the assembled bowls if desired. Serve immediately and enjoy your BBQ Salmon Bowl!
