Prepare the Cauliflower
Preheat your oven to 425°F (220°C). Toss the cauliflower florets in olive oil, cumin, smoked paprika, salt, and black pepper until evenly coated.

Roast the Cauliflower
Spread the cauliflower on a baking sheet in a single layer. Roast for 25-30 minutes, or until golden and tender, stirring halfway through.

Warm the Tortillas
In the last 5 minutes of roasting, place the corn tortillas on another baking sheet and warm them in the oven for 5 minutes.
Chipotle Mayo

Make the Chipotle Mayo
In a small bowl, combine mayonnaise, chipotle in adobo sauce, and lime juice. Mix well until smooth.
Cilantro Chimichurri

Prepare the Chimichurri
In a food processor, combine fresh cilantro, garlic, red wine vinegar, olive oil, salt, and red pepper flakes. Pulse until finely chopped and well mixed.
Corn Guacamole

In a bowl, mash the ripe avocados with lime juice and salt. Fold in corn, diced tomatoes, chopped red onion, and cilantro until well combined.
