Ribeye Steak

Method

Preparing the Ribeye

    Season the Steak

    Remove the ribeye from the refrigerator and let it come to room temperature for about 30 minutes. Season generously with salt and black pepper on both sides.

    Sear the Steak

    In a large skillet, heat olive oil over medium-high heat. Once hot, add the ribeye steak and sear for about 4-5 minutes on each side for medium-rare, or to your desired doneness.

    Make Garlic Butter

    In the last minute of cooking the steak, add butter and minced garlic to the skillet. Spoon the melted garlic butter over the steak for flavor. Remove steak from skillet and let rest.

    Prepare Peppercorn Sauce

    In the same skillet, add heavy cream and whole peppercorns. Stir and cook over medium heat until the sauce thickens slightly. Season with salt to taste.

Making the Crispy Mashed Potatoes

    Boil the Potatoes

    Peel and chop potatoes into chunks. Boil in salted water until fork-tender, about 15-20 minutes. Drain and return to pot.

    Mash and Crisp

    Add butter, cream cheese, milk, salt, and pepper to the potatoes. Mash until smooth. Transfer to a baking dish and drizzle with olive oil. Bake at 400°F (200°C) for 15-20 minutes until the top is crispy.

    Garnish

    Sprinkle with chopped parsley before serving.

Cooking the Seasonal Vegetables

    Prepare the Vegetables

    Wash and cut the seasonal vegetables into bite-sized pieces.

    Sauté the Vegetables

    In a skillet, heat olive oil over medium heat. Add the vegetables, season with salt and pepper, and sauté for about 5-7 minutes until tender.
