Prepare the Tofu
Press the tofu for 15-20 minutes to remove excess moisture. Cut into small cubes.

Make the Sweet Soy Ginger Glaze
In a small bowl, mix soy sauce, grated ginger, honey (or maple syrup), and minced garlic. Set aside.

Cook the Tofu
Heat vegetable oil in a skillet over medium-high heat. Add the tofu cubes and sauté until golden brown, about 8-10 minutes. Pour the sweet soy ginger glaze over the tofu and cook for an additional 2-3 minutes until well coated.

Prepare the Vegetables
In the same skillet, add diced red bell pepper and grated carrots. Sauté for 3-4 minutes until vegetables are tender.

Assemble the Wraps
Place a spoonful of the tofu and vegetable mixture onto a butter lettuce leaf. Top with chopped peanuts and crispy wonton strips.
