Tataki-Style Steak
Ponzu Sauce
Seared Salmon Sushi or Tuna & Avocado Crunch Roll
Method
Prepare the Tataki-Style Steak

Marinate the Beef
In a bowl, combine soy sauce, rice vinegar, sesame oil, minced garlic, and grated ginger. Add the beef tenderloin and let it marinate for at least 30 minutes.

Sear the Beef
Heat a skillet over high heat. Remove the beef from the marinade and sear it on all sides for about 1-2 minutes until browned but still rare in the center. Remove from heat and let it rest.

Slice the Beef
Once rested, thinly slice the beef and sprinkle with sliced green onions and toasted sesame seeds.
Prepare the Ponzu Sauce

Mix Ingredients
In a bowl, combine soy sauce, yuzu juice, mirin, rice vinegar, and dashi broth. Whisk together until well combined.
Prepare the Sushi

Cook the Sushi Rice
Rinse sushi rice under cold water until the water runs clear. Cook according to package instructions. Once cooked, mix in rice vinegar and let it cool.

Assemble the Sushi Rolls
Lay a nori sheet on a bamboo mat. Spread a thin layer of sushi rice over the nori, leaving a small border. Place slices of fresh salmon or tuna, avocado, and cucumber in a line. Roll tightly and slice into pieces.

Serve
Plate the sushi rolls with tempura flakes on top. Serve with ponzu sauce, wasabi, and pickled ginger.
