    Prepare Sushi Rice

    Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to package instructions. Once cooked, mix rice vinegar, sugar, and salt in a small bowl until dissolved, then fold it into the rice. Let it cool.

    Sear the Salmon

    Heat olive oil in a skillet over medium-high heat. Season salmon fillet with salt and sear for about 2-3 minutes on each side until golden brown. Remove from heat.

    Torch the Salmon

    Using a kitchen torch, carefully sear the top of the salmon fillet until it is lightly charred, adding a smoky flavor.

    Slice the Salmon

    Once the salmon is torched and slightly cooled, slice it into thin strips.

    Prepare Serrano Peppers

    Thinly slice the serrano peppers and set aside.

    Assemble Sushi

    Take a small amount of sushi rice and mold it into a small ball or rectangle. Top with a slice of seared salmon and a few slices of serrano peppers. Drizzle with umami sauce if desired.
