Baking Instructions

  1. 1

    Prepare the Oven

Preheat your oven to 200°C (400°F). Grease four ramekins with butter and dust with cocoa powder.

  2. 2

    Melt Chocolate and Butter

In a heatproof bowl, combine dark chocolate and unsalted butter. Melt them together over a pot of simmering water or in the microwave, stirring until smooth.

  3. 3

    Mix Sugar and Eggs

In a separate bowl, whisk together the granulated sugar and large eggs until the mixture is light and fluffy.

  4. 4

    Combine Mixtures

Slowly pour the melted chocolate mixture into the egg mixture, stirring continuously to combine.

  5. 5

    Add Dry Ingredients

Sift in the all-purpose flour and salt, and gently fold until just combined.

  6. 6

    Pour into Ramekins

Divide the batter evenly among the prepared ramekins.

  7. 7

    Bake

Bake in the preheated oven for about 12-14 minutes, until the edges are set but the center remains soft.

  8. 8

    Cool and Serve

Let the cakes cool for 1 minute, then run a knife around the edges and invert onto plates. Serve immediately with fresh raspberries and a scoop of Tahitian vanilla ice cream.
