Prepare the Chicken

Marinate the chicken breasts in harissa paste for at least 30 minutes. Preheat a grill or skillet over medium-high heat and cook the chicken for 6-7 minutes on each side until fully cooked. Let it rest before slicing.

Cook the Rice

In a pot, bring 2 cups of water to a boil. Add the jasmine rice, reduce heat to low, cover, and simmer for 15 minutes until the rice is fluffy. Remove from heat and let it sit for a few minutes.

Prepare the Bowls

In serving bowls, layer the jasmine rice, sliced harissa chicken, chickpeas, artichokes, roasted peppers, kalamata olives, and gem tomatoes.

Add Sauces

Top each bowl with a generous dollop of hummus and tzatziki sauce.

Serve

Garnish with fresh herbs if desired and serve immediately.
