Preparation Steps
Prepare the Chicken
Pat the chicken breasts dry with paper towels. Rub Cajun seasoning on both sides of each breast.
Cook the Chicken
In a skillet, heat olive oil over medium-high heat. Add chicken breasts and cook for about 6-7 minutes on each side until blackened and cooked through. Remove from heat and let rest.
Make the Warm Potato Salad
In a pot, boil diced potatoes until tender. Drain and return to the pot. Add crumbled bacon and green onions. Toss gently to combine.
Make the Creamy Coleslaw
In a bowl, mix mayonnaise, apple cider vinegar, sugar, salt, and black pepper. Add shredded cabbage and carrots. Toss to coat evenly.
Serve
Slice the chicken and serve alongside the warm potato salad and creamy coleslaw.
