Preheat the oven to 200°C (400°F). Clean the button mushrooms by wiping them with a damp cloth. Trim the ends if necessary. Peel and quarter the shallots. Mince the garlic.
2. Make the Marinade
In a small bowl, mix together the miso paste, olive oil, white wine, minced garlic, salt, and black pepper until well combined.
3. Coat the Vegetables
In a large mixing bowl, combine the button mushrooms and shallots. Pour the miso marinade over the vegetables, tossing to coat them evenly.
4. Roast the Mushrooms
Spread the coated mushrooms and shallots on a baking sheet in a single layer. Roast in the preheated oven for 20-25 minutes, or until the mushrooms are golden brown and tender.
5. Garnish and Serve
Once roasted, remove from the oven and sprinkle with fresh parsley before serving.
