Prepare the Pastry

    Make the Dough

    In a large bowl, combine flour, salt, and sugar. Add the chilled butter and mix with a pastry cutter or your fingers until the mixture resembles coarse crumbs. Stir in the ice water a tablespoon at a time until the dough comes together. Divide the dough into 4 equal portions, shape into disks, wrap in plastic wrap, and refrigerate for at least 1 hour.

    Mix the Filling

    In a large bowl, combine sliced apples, sugar, cinnamon, lemon juice, chopped almonds, and flour. Toss until the apples are well coated.

Assemble the Pies

    Fill and Fold

    Preheat your oven to 375°F (190°C). Roll out each disk of pastry on a floured surface to about 1/8 inch thick. Place the rolled pastry into individual pie dishes. Fill each with the apple mixture, leaving some space at the top. Fold the edges of the pastry over the filling, creating a rustic look.

Bake the Pies

    Add Egg Wash

    Brush the tops of the pies with the beaten egg and sprinkle with turbinado sugar. Bake in the preheated oven for 30-35 minutes or until the crust is golden brown and the filling is bubbly.
