    Cook the Brown Rice

    In a medium pot, combine 1 cup of brown rice with 2 cups of water. Bring to a boil, then reduce heat to low and cover. Cook for about 45 minutes or until rice is tender and water is absorbed. Set aside to cool.

    Sauté the Vegetables

    In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onions and garlic; sauté until translucent. Add the chopped mushrooms and cook until they release their moisture and are browned. Season with salt and black pepper. Remove from heat and let it cool.

    Mix the Burger Ingredients

    In a large bowl, combine the cooked brown rice, sautéed mushroom mixture, ground almonds, and miso paste. Mix until well combined. Form the mixture into patties, about 1/2 inch thick.

    Cook the Patties

    Preheat a grill or non-stick skillet over medium heat. Cook the patties for about 5-7 minutes on each side, until golden brown and heated through.

    Serve the veggie burgers on a plate with fresh arugula on the side or as a topping. Enjoy!
