Preparation

    Prepare the Preserved Tomatoes

    In a bowl, mix cherry tomatoes with olive oil, balsamic vinegar, minced garlic, salt, and pepper. Let it marinate for at least 30 minutes.

    Make Creamy Mashed Potatoes

    Boil the cubed potatoes in salted water until tender. Drain and return to pot. Add butter, cream, salt, and pepper, and mash until smooth.

    Prepare the Vegetables

    In a skillet, heat olive oil over medium heat. Add snap peas and asparagus, season with salt and pepper, and sauté for about 5-7 minutes until tender.

    Make Truffle Beurre Blanc

    In a saucepan, combine minced shallots and white wine. Reduce until nearly dry. Add cream and reduce again. Gradually whisk in cold butter, truffle oil, salt, and white pepper. Keep warm.

    Cook the Salmon

    Preheat a grill or skillet over medium-high heat. Rub salmon with olive oil, salt, pepper, and fresh herbs. Cook for 4-5 minutes per side, or until desired doneness.

Assembly

    Plate the Dish

    On each plate, place a serving of creamy mashed potatoes, top with the grilled salmon, drizzle with truffle beurre blanc, and serve with preserved tomatoes and sautéed vegetables on the side.
