    Prepare the Crust

    Preheat the oven to 325°F (160°C). In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from the oven and let cool.

    Make the Cheesecake Filling

    In a large mixing bowl, beat the cream cheese and granulated sugar until smooth. Add vanilla extract and mix well. Add eggs one at a time, mixing well after each addition. Finally, stir in heavy cream and sour cream until fully combined.

    Bake the Cheesecake

    Pour the cheesecake filling over the cooled crust. Bake for 55-60 minutes or until the center is set but slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour.

    Prepare the Strawberry Compote

    In a small saucepan over medium heat, combine the strawberries, granulated sugar, and lemon juice. Cook for about 10 minutes until the strawberries break down and the mixture thickens slightly. Remove from heat and let cool.

    Make the Whipped Cream

    In a mixing bowl, beat the heavy cream with powdered sugar and vanilla extract until soft peaks form. Be careful not to overbeat.

    Once the cheesecake has cooled, remove it from the springform pan. Serve slices topped with strawberry compote and a dollop of whipped cream.
