Cheesecake Preparation

Prepare the Crust
Preheat your oven to 325°F (160°C). In a mixing bowl, combine the cream cheese and granulated sugar until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, heavy cream, sour cream, and flour until fully combined.

Bake the Cheesecake
Pour the cheesecake mixture into a greased 9-inch springform pan. Bake for 55-60 minutes, or until the center is set but slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour. Then refrigerate for at least 4 hours or overnight.

Prepare the Strawberry Compote
In a small saucepan, combine fresh strawberries, a tablespoon of sugar, and a splash of water. Cook over medium heat until the strawberries break down and the mixture thickens, about 10-15 minutes. Let cool.

Whip the Cream
In a medium bowl, whip the heavy cream until soft peaks form. Add sugar to taste, and continue whipping until stiff peaks form.

Serve
Remove the cheesecake from the springform pan. Top with the strawberry compote and dollops of whipped cream before serving.
