Prepare the Tofu
Press the tofu to remove excess moisture, then cut it into cubes.

Fry the Tofu
In a large skillet, melt 2 tbs of butter over medium heat. Add the tofu cubes and cook until golden brown and crispy on all sides. Remove from the skillet and set aside.

Cook the Rice
In a medium pot, bring 2 cups of water to a boil. Add the basmati rice and a pinch of salt. Reduce heat to low, cover, and simmer for about 15 minutes or until the rice is tender and water is absorbed.

Make the Sauce
In the same skillet, add the remaining 2 tbs of butter. Once melted, add the minced garlic, grated ginger, and curry powder. Sauté for 1-2 minutes until fragrant. Pour in the heavy cream and stir until combined. Season with salt to taste.

Combine Tofu and Sauce
Add the crispy tofu back into the skillet with the sauce. Stir to coat the tofu evenly and simmer for 5 minutes.
