Donut Preparation

Make the Donut Batter
In a large bowl, whisk together flour, sugar, baking powder, salt, and nutmeg. In another bowl, beat the eggs, milk, melted butter, and vanilla. Combine wet and dry ingredients until just mixed.

Fry the Donuts
In a deep fryer or large pot, heat vegetable oil to 350°F (175°C). Using a spoon or donut cutter, drop batter into the hot oil, frying until golden brown on each side (about 2-3 minutes). Remove and drain on paper towels.
Mascarpone Cream Preparation

Make the Mascarpone Cream
In a mixing bowl, whip heavy cream until soft peaks form. Gently fold in mascarpone cheese, powdered sugar, and vanilla extract until smooth and well combined.
Lemon Curd Preparation

Make the Lemon Curd
In a saucepan, whisk together lemon juice, sugar, eggs, and lemon zest. Cook over medium heat, stirring constantly until thickened (about 10 minutes). Remove from heat and stir in butter until melted. Let cool.
Assembly

Assemble the Donuts
Once donuts are cooled, fill them with mascarpone cream using a piping bag. Serve with a dollop of lemon curd on top or on the side.
