Cooking the Pasta and Sauce

    Cook the Spaghetti

    Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Tomato Sauce

    In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Stir in Calabrian chili paste, then add canned tomatoes (crushing them with your hands as you add). Season with salt and black pepper. Simmer for 15-20 minutes, stirring occasionally.

    Combine Pasta and Sauce

    Add the cooked spaghetti to the tomato sauce and toss to combine. Cook for another 2-3 minutes until heated through.

Making Whipped Ricotta

    Whip the Ricotta

    In a bowl, combine ricotta cheese, heavy cream, and salt. Using a whisk or electric mixer, whip until smooth and creamy.

Preparing Garlic Toast

    Make the Garlic Toast

    Brush the bread slices with olive oil and toast them until golden brown. Rub the toasted bread with the halved garlic clove for flavor.

Serving

    Plate and Serve

    Serve the spaghetti pomodoro topped with whipped ricotta, fresh basil leaves, and grated parmesan. Accompany with garlic toast on the side.
