Crust Preparation

    Make the Crust

    In a mixing bowl, combine graham cracker crumbs, melted butter, sugar, and smoked sea salt. Mix until well combined. Press the mixture firmly into the bottom and sides of a pie dish. Bake at 350°F (175°C) for 10 minutes. Allow to cool.

Filling Assembly

    Add the Ice Cream

    Scoop the vanilla ice cream into the cooled crust and spread it evenly. Top with mini marshmallows.

Torching Marshmallows

    Torch the Marshmallows

    Using a kitchen torch, carefully toast the mini marshmallows until golden brown. Set aside.

Sauce Preparation

    Make Chocolate Caramel Sauce

    In a small saucepan, heat the heavy cream until simmering. Remove from heat and add chopped dark chocolate, stirring until smooth. Drizzle in the salted caramel sauce and stir to combine.

Topping Preparation

    Prepare the Whipped Cream and Rosemary

    In a bowl, whip the heavy whipping cream until stiff peaks form. Set aside. In a small pan, heat sugar and rosemary leaves on low until caramelized. Remove from heat.

Final Assembly

    Assemble the Pie

    Spread the whipped cream over the toasted marshmallows. Drizzle with chocolate caramel sauce and garnish with crispy rosemary leaves.

    Chill the pie for at least 1 hour before slicing. Serve and enjoy!
