Steak

Crispy Mashed Potatoes

Method

Steak Preparation

  1. 1

    Prepare the Steak

Take the New York Strip steak out of the refrigerator and let it sit at room temperature for about 30 minutes. Season both sides generously with salt, black pepper, and garlic powder.

  2. 2

    Cook the Steak

Heat the olive oil in a cast-iron skillet over high heat. Once hot, add the steak and sear for about 4-5 minutes on each side, or until desired doneness is reached. Add fresh rosemary during the last minute of cooking.

  3. 3

    Rest the Steak

Remove the steak from the skillet and let it rest for 5-10 minutes before slicing.

Crispy Mashed Potatoes Preparation

  1. 4

    Boil the Potatoes

Peel and cut the russet potatoes into quarters. Boil in salted water until fork-tender, about 15-20 minutes.

  2. 5

    Mash and Prepare for Crisping

Drain the potatoes and return them to the pot. Add butter, heavy cream, salt, and black pepper. Mash until smooth.

  3. 6

    Crisp the Potatoes

In a separate skillet, heat olive oil over medium-high heat. Scoop mashed potatoes into the skillet and flatten with a spatula. Cook until crispy and golden brown on one side, then flip and crisp the other side.

Vegetable Preparation

  1. 7

    Prepare the Vegetables

In a bowl, toss seasonal vegetables with olive oil, salt, and black pepper.

  2. 8

    Sauté the Vegetables

In the same skillet used for the steak, add the seasoned vegetables and sauté for about 5-7 minutes until tender and slightly charred.
