    Make the Filling

    In a bowl, combine the ground pork, green onions, garlic, ginger, soy sauce, sesame oil, salt, and pepper. Mix well until all ingredients are thoroughly combined.

    Assemble the Gyoza

    Place a gyoza wrapper in the palm of your hand. Spoon about 1 tablespoon of the filling into the center of the wrapper. Moisten the edges of the wrapper with a little water, then fold the wrapper over to create a half-moon shape. Pinch the edges to seal tightly, creating pleats along the edge if desired.

    Cook the Gyoza

    Heat a non-stick skillet over medium-high heat and add a bit of oil. Once hot, place the gyoza in the skillet, flat side down. Cook for about 2-3 minutes until the bottoms are golden brown. Carefully add about 1/4 cup of water to the skillet and cover immediately. Allow the gyoza to steam for about 5-7 minutes or until the water is fully evaporated.

    Serve

    Remove the gyoza from the skillet and serve hot with hot mustard on the side for dipping.
