Make the Cheesecake Filling
In a large mixing bowl, beat the cream cheese until smooth. Gradually add granulated sugar and beat until creamy. Mix in sour cream, vanilla extract, and cornstarch. Add eggs one at a time, mixing on low speed until just combined. Pour the filling over the cooled crust.

Bake the Cheesecake
Bake in the preheated oven for 50-60 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door slightly open for 1 hour.

Prepare the Compote
In a saucepan over medium heat, combine fresh strawberries, sugar, and lemon juice. Cook for about 10 minutes, stirring occasionally, until the strawberries are soft and the mixture is syrupy. Remove from heat and let cool.

In a mixing bowl, whip the heavy cream until soft peaks form. Add powdered sugar and vanilla extract, and continue whipping until stiff peaks form.

Once the cheesecake is completely cooled, spread the strawberry compote over the top. Serve slices of cheesecake with a dollop of whipped cream on each plate.
