Blackened Chicken

Prepare the Chicken
Pat the chicken breasts dry with paper towels. Rub the olive oil over each breast, then generously coat both sides with blackening seasoning.

Cook the Chicken
Heat a skillet over high heat until it's smoking hot. Add the chicken and cook for 5-6 minutes on each side until the chicken is cooked through and has a blackened crust. Remove and let rest.

Combine Ingredients
In the same skillet with the bacon fat, add the potatoes. Stir in the mayonnaise, apple cider vinegar, crumbled bacon, chopped green onions, salt, and pepper. Toss to combine and heat through.
Horseradish Aioli

Make the Aioli
In a bowl, combine mayonnaise, horseradish, lemon juice, minced garlic, and salt. Mix well and adjust seasoning to taste.
Creamy Coleslaw

Prepare the Slaw
In a large bowl, combine shredded cabbage and carrots. In another bowl, mix together mayonnaise, apple cider vinegar, sugar, salt, and pepper until smooth. Pour the dressing over the cabbage mixture and toss to coat.
