Fish Preparation
Prepare the Cod
Preheat the oven to 400°F (200°C). Place the wild cod fillets on a baking sheet lined with parchment paper. Drizzle with olive oil, season with salt and pepper, and bake for 15-20 minutes until the fish is cooked through and flakes easily with a fork.
Rice Preparation
Cook the Rice
In a medium saucepan, combine jasmine rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.

Prepare the Vegetables
While the fish and rice are cooking, steam the cauliflower florets and snap peas until tender, about 5-7 minutes.
Sauce Preparation
Make the Thai Peanut Curry Sauce
In a bowl, whisk together peanut butter, coconut milk, soy sauce, lime juice, minced garlic, grated ginger, and red chili flakes until smooth. Adjust seasoning to taste.
Assembly
Serve
On a plate, place a serving of steamed rice, top with roasted cod, steamed vegetables, and drizzle with the Thai peanut curry sauce. Garnish with sliced almonds and chopped cilantro.
