Make the Roux

In a large pot or Dutch oven, heat the vegetable oil over medium heat. Gradually whisk in the flour, stirring constantly until the mixture turns a dark brown color, about 20-25 minutes.

Once the roux is ready, add the diced onion, celery, and bell pepper (the 'holy trinity' of Cajun cooking) to the pot. Cook for about 5 minutes, until the vegetables are soft.

Add the shredded smoked chicken, chicken broth, canned diced tomatoes (with juice), okra, bay leaves, cayenne pepper, thyme, salt, and black pepper. Stir well to combine.

Bring the mixture to a boil, then reduce heat to low. Cover and let it simmer for about 45 minutes, stirring occasionally.

Remove the bay leaves. Serve the gumbo hot over cooked rice, garnished with chopped green onions.
