Preparation and Smoking

Prepare the Spice Rub
In a bowl, mix together paprika, brown sugar, garlic powder, onion powder, salt, and black pepper. Make sure the mixture is well combined.

Prepare the Meats
Rub the spice mixture generously over each piece of meat, ensuring they are well coated. Let the meat sit at room temperature for about 30 minutes to absorb the flavors.

Prepare the Smoker
Soak the wood chips in water for at least 30 minutes before using. Prepare your smoker and preheat it to 225°F (107°C).

Smoke the Meats
Place the meat in the smoker, using the soaked wood chips for smoke. Smoke the pork shoulder for about 8 hours, the brisket for 12 hours, chicken thighs for 2-3 hours, and turkey breast for 4-5 hours, or until they reach the desired internal temperature.

Rest and Serve
Once cooked, remove the meats from the smoker and let them rest for at least 20 minutes before slicing. Serve with your favorite sides.
